Dopo le super abbuffate pre-Natalizie, post Natalizie, i super dolci danesi e tutto il resto, \u00e8 meglio iniziare a cucinare (e mangiare) qualcosa di pi\u00f9 leggero.<\/p>\n

Ecco qua, la mia versione dell\u2019insalata di polpo<\/a>.<\/p>\n

INGREDIENTI PER 2 PERSONE: 500 gr di polpo pulito \u2013 1 carota \u2013 1 gambo di sedano \u2013 1 cipolla piccola \u2013 prezzemolo \u2013 sale \u2013 pepe \u2013 2 cucchiaini di succo di limone \u2013 3 cucchiai di olio extra vergine d\u2019oliva - prezzemolo<\/span><\/p><\/div>\n

Lavate e\u00a0 pulite carota e sedano. Sbucciate la cipolla, mettete le verdure in una capiente pentola con acqua salata.<\/p>\n

Quando inizia a bollire, dovete tenere il polpo per la \u201ctesta\u201d e immergere solo i tentacoli e tirare su, dovete immergerlo e tirarlo su per 3 o 4 volte, in modo che i tentacoli si arriccino. Poi potete lasciarlo gi\u00f9.<\/p>\n

Deve bollire per 25 – 30 minuti, coperto e a fuoco lento.<\/p>\n

Per verificare se \u00e8 cotto provate a forarlo con una forchetta, deve entrare bene, il polpo deve essere morbido.<\/p>\n

Quando \u00e8 cotto, tiratelo su e mettetelo su un tagliere (o un piatto) e tagliatelo a rondelle.<\/p>\n

Preparate un emulsione con il limone, l\u2019olio, 2 pizzichi di sale e una macinata di pepe.<\/p>\n

Mettete il polpo in una ciotola e condite con l\u2019emulsione.<\/p>\n

Infine aggiungete del prezzemolo tritato.<\/p>\n

E\u2019 buono mangiato cos\u00ec, subito e tiepido ma sar\u00e0 molto pi\u00f9 buono, se lo lascerete a insaporirsi (in frigorifero) per un paio di ore.<\/p>\n
